Quick & Easy Asian Tomato Gazpacho

In summer I love a chilled soup and the classic Spanish Tomato Gazpacho is an all time winner. This is my Asian version.

There is a bit of work involved with this but its worth the effort. The soup needs to be made in advance and well chilled.

Asian Tomato Gazpatcho, serves 6, total time 30 mins

Ingredients: Asian Tomato Gazpacho

serves 6

750 g tomatoes, deseeded and finely chopped

1 small cucumber, peeled, deseeded and finely chopped

1 yellow capsicum, deseeded and finely chopped

2 cloves garlic, diced

1 small red onion, finely diced

1/3 cup coriander leaves, chopped

a few mint leaves, chopped

1 small red chill, finely chopped (optional), more to taste

50 ml Japanese rice vinegar

juice and rind of 2 limes

2 cups tomato juice

Method: Asian Tomato Gazpacho

Combine all the ingredients. season with salt and pepper to taste. chill well before serving.
