Low-Calorie Asian Lettuce Cups

This is my adaptation of a classic. You can use what ever mince you like but make sure that it is lean. My preference is either pork or chicken.

Asian Lettuce Cups, serves 4, total time 30 minutes

Ingredients: Asian Lettuce Cups

1 small onion, finely diced

1 tlbspn minced ginger

4 cloves garlic, finely diced

1 small red chilli, finely chopped (optional)

a little sesame oil,

500 g lean mince

4 spring onions, finely sliced

1 cup bean sprouts

1/3 cup hoisin sauce

2 tlbspn black bean sauce

16-20 lettuce cups

extra hoisin sauce for serving

Method: Asian Lettuce Cups

Saute the onion, ginger and garlic in the sesame oil until aromatic. Add the mince and cook thoroughly. Fold through the spring onion, bean sprouts, hoisin and black bean sauce and cook until well combined.

Serve in a bowl with the lettuce cups on the side. Spoon a little of the mix into a lettuce cup add a little hoisin roll up and eat.
