Tabbouleh Superfoods Salad

Tabbouleh is one of those classic salads. This I my adaptation using quinoa. I first made this at least 25 years ago when I first discovered quinoa, an ancient grain that originated in Latin America. It truly is one of the superfoods being very high in protein, fiber and minerals .Pomegranates are also a super food as they are very high concentration of antioxidants.

Tabbouleh With quinoa, mint and pomegranate dressing

Ingredients: Tabbouleh Superfoods Salad

250 g quinoa

1 pomegranate, arils removed

1 cup flat leaf parsley, chopped

1/2 cup mint, chopped

1 large cucumber, seeds removed, diced

4 large tomatoes, seeds removed, diced

1/3 cup pomegranate juice

1/3 cup white wine

2 cloves garlic, finely diced

salt and pepper, to taste

Method: Tabbouleh Superfoods Salad

Cook the quinoa as per packet instructions. Drain well and set aside to cool.

Meanwhile make the dressing by combining the pomegranete juice, wine and garlic.

When the quinoa is cool combine with the salad ingredients. Toss through the dressing and season to taste.

Notes: I use quinoa in so many different dishes. If you have extra cooked try using in a stuffing. It's also great in soups.
