Spaghetti With Prosciutto, Lemon, Olives, Chilli and Mint
This has to be one of my all time favourite pastas. Use the best quality olive oil you have.

Spaghetti With Prosciutto, Lemon, Olives, Chilli and Mint
Ingredients: Spaghetti with Prosciutto, Lemon, Olives, Chilli and Mint
250 g spaghetti
150 mls extra virgin olive oil
4 cloves garlic, thinly sliced
1 red birds eye chilli, diced (more/less, to taste)
125 g kalamata olives, pitted if desired
6 slices of prosciutto, torn
juice of 2 lemons, to taste
4 tlbspn chopped mint
freshly shaved parmesan cheese
Method: Spaghetti with Prosciutto, Lemon, Olives, Chilli and Mint
Cook the pasta according to packet instructions.
Gently heat the olive oil in a large pan and add the garlic, chilli, and olives. When the garlic has softened add the prosciutto and stir until slightly browned and a little crisp. Reduce the heat and add the lemon juice.
Add the hot drained pasta and mint to the prosciutto mixture and toss through. Serve with the shaved parmesan cheese.
Note: Salami is equally effective with this dish. This can also be vegetarian and/or vegan by not adding the prosciutto and cheese.
Use a very good quality durum wheat pasta.
