Delicious Chinese Duck Coleslaw
This is a healthy alternative to the traditional creamy coleslaws that we grew up with. Great fresh Asian flavours. Excellent as a side dish at a BBQ. I either buy a pre-cooked duck from my local Asian supermarket or cook a couple of duck breasts which I purchase at the supermarket.
Delicious Chinese Duck Coleslaw, serves 4, total time 25 mins
Method: Chinese Duck Coleslaw
Salad:
1/3 cabbage, shredded. (I like to use a mix of both green and red, you may need more/less depending on size)
1 red capsicum, membranes removed and finely sliced
1 cup bean sprouts
2 spring onions sliced
the meat of half a roasted duck or 2 cooked duck breasts
handful each of chopped mint and coriander
Dressing:
4 star anise, very finely crushed
20 ml fish sauce
80 ml sesame oil
20 ml kecap manis
salt and pepper, to taste
Toss all the salad ingredients together. Combine all the dressing ingredients and toss together.
Note: At times I have I have made this with a mayo dressing. I combine Japanese mayo with a store bought sesame dressing.
