Pearl Couscous, Mango & Pomegranate Salad
Pearl couscous otherwise known as giant couscous or Israeli couscous is a type of pasta developed in Israel in the 1950s due to a shortage of rice. Orzo pasta is a great alternative.

Ingredients: Pearl Couscous, Mango & Pomegranate Salad
200 g Pearl couscous or orzo pasta
1 mango, peeled and diced
1 pomegranate, arils removed. (Best to do this by cutting in half and deseed over a sieve retaining any juice. Pick out any pith.)
1 each red and green capsicums, cut in half seeds and membranes removed, finely sliced.
1 small red onion, finely sliced
2 cups cherry tomatoes, cut into halves
1/2 cup each of roughly chopped flat leaf parsley and basil
1/2 cup pine nuts, lightly toasted
extra virgin olive oil to dress
salt and pepper
Method: Pearl Couscous, Mango & Pomegranate Salad
Cook the couscous/orzo as per packet instructions.
Toss together the mango, pomegranate and juice, capsicums, onion, tomatoes, herbs and pine nuts until well combined.
Drizzle with a little olive oil and season to taste. Re toss to combine.
